Such beautiful glossy deep purple colour, almost black. These delicious fruits are very versatile. Use as a vegetable, baked on their own, sliced and grilled with tomato & cheese topping, dipped in batter and fried, chopped and baked with garlic onions tomatoes courgettes etc. Eggplants are also ideal as a recipe extender as they will take on the flavour of other ingredients – great with mushrooms.
The fruit can be eaten at any size and when just picked is firm and glossy. Outdoor eggplants love warm weather and are available from January through to frosts early May. Plant out in early to mid November when ground temperature warming for good growth and fruit set in warmer temperatures.
